A lot of what gets written about dates online is marketing dressed up as nutrition science. Here is the plain version: dried dates run around 270-300 calories per 100 grams, most of that as natural fructose and glucose, with roughly 6-8 grams of fibre, close to 650mg of potassium, and smaller amounts of magnesium, manganese and B6. A handful (3-5 dates) is a normal serving; eating a full box in a sitting is just a lot of sugar, however natural.

Iran grows several distinct date varieties, and they are not interchangeable in a recipe or on a shelf. Mazafati is soft and moist, sold semi-dried, and needs a cold chain to travel well. Piarom is dried and wrinkled, has a much longer shelf life at room temperature, and commands a higher price because of that shelf stability and its darker, caramel flavour. Zahedi is drier and firmer, cheaper, and is the variety most often used in bulk baking and industrial sweetening rather than eaten on its own. Kabkab sits in between — soft enough to eat plain, sturdy enough to ship without much spoilage. The sugar concentration rises as the moisture drops, so a dry Piarom tastes noticeably sweeter per bite than a moist Mazafati of the same size.
If you are sourcing at any volume, the questions that matter are grading (jumbo, large, medium — sizing affects price per kilo more than people expect), moisture percentage at the point of receiving (too high and the load risks mould in transit; too low and you are paying for a drier, cheaper grade at a fresher price), and the harvest window — Iran’s main date harvest runs from August through October, and stock bought soon after harvest is a different product from stock that has sat in a warehouse for eight months. Working with an established wholesale date supplier who can show moisture readings and harvest dates on the paperwork saves a lot of guesswork compared to buying on a supplier’s word alone — the same discipline applies whether you’re buying direct or through one of the region’s dates fruit exporters.
Dates are a genuinely good natural sweet with a solid nutrition profile. Treat claims that they cure disease, boost fertility or replace medical care as marketing, not fact — and buy on grade, moisture and freshness, not on the slogan printed on the box.
